PALEO WHOLE30 MELT-IN-YOUR-MOUTH BUTTER COOKIES
Sometimes on this Paleo Whole30 journey, you feel like something small and sweet, forgoing a full dessert.
When I was making Paleo Whole30 cinnamon buns from my FRESH DOH Grain and Gluten-Free Fresh Pasta Dough Mix (the DOH makes bread and desserts too), I noticed that if I tweaked the recipe a little the taste and texture would be ideal for butter cookies. I remember tasting butter cookies for the first time while visiting my friends Palle and Lone Norit in Denmark. Loved the rich, crumbling, and melt-in-your-mouth texture.
Butter cookies, (also known as Brysselkex, Sablés, and Danish biscuits), are unleavened cookies consisting of butter, flour, and sugar. My Paleo Whole30 version is FRESH DOH, plant-based butter, and raw honey.
RECIPE NUTRITIONAL VALUE: For this recipe, I am focusing here on raw honey.
Raw Honey: Glycemic Index 62
¾ cup = 1 cup of sugar
If you must have some form of sugar, consider raw honey. Much like cheese, honey can be raw or pasteurized (heat-treated). Pasteurized honey must be heated to a minimum temperature whereas the raw version is kept in its natural state with no heat or filtering. Heat treatment extends the honey’s liquid form, which is easier to leave the container when used. Raw honey stays liquid for about a month, then crystalizes. So if you’re not using it right away, you’ll have to put it to heat treatment on the stove or in the microwave to bring it back to liquid form. So in essence, you’re heat treating the raw honey anyway. Raw honey retains more of its natural nutrition and properties.
Raw honey possesses about twenty-two calories per teaspoon. As a result, people consume about half as much. So, it becomes a better caloric trade-off. This sweetener is also less processed. The refining process strips out the vitamins, minerals, proteins, and fiber once found in the sugar cane. Hence sugar becomes empty calories.
Honey is anti-bacterial, anti-fungal, and anti-viral. So, the next time you have the flu or a bad cold, sip lemon-ginger tea with fresh lemon juice and fresh ginger and use raw honey. Honey is also alkalizing for the body and aids in acid-indigestion. Research also shows raw honey reduces muscle cramps and cures insomnia. Vitamins B1, B2, B3, B5, B6, as well as vitamin C is found in honey, along with magnesium, potassium, calcium, sodium chlorine, copper, iron, manganese, zinc, and phosphate. It’s super healthy!
The biggest secret about raw honey? It helps to dissolve fat. In the morning consume one to two teaspoons of raw honey in warm water with fresh lemon.
RECIPE TASTE PROFILE: The best way to say this is that these little babies are crunchy, buttery, and melt-in-your-mouth. The predominant taste sensation being fattiness from the butter.

1 package FRESH DOH Grain and Gluten-Free Fresh Pasta Dough Mix
1 cup grass-fed or plant-based butter or ghee
1 egg yolk
½ cup raw honey
1 teaspoon vanilla
½ cup toasted pecan pieces (optional)
In the bowl of a mixer combine all ingredients, except for the pecan pieces, and mix until wet DOH forms. Remove from mixer. Cover the bowl with plastic wrap and refrigerate for at least 2 hours to firm DOH.
Preheat oven to 350. Cover a cookie pan with parchment paper. Scoop about a teaspoon of DOH and roll into a ball. Set ball on cookie sheet. Repeat the process 11 more times to make 12 cookies in your first batch. Using your fingers gently flatten the ball just a little bit. (It will flatten even more baking). While the first batch of cookies are baking, set the remainder of DOH in the refrigerator. Bake the first batch for about 20 to 25 minutes until cookies are lightly golden and the bottom is dark golden. Remove baking sheet from oven. Let cool. Remove cookies from the baking sheet. Remove DOH from the refrigerator and make the remainder.
